Biwa’s wagyu beef, simmered “more or less” in the sukiyaki, or hot soup, style, is representative of the restaurant’s approach to Japanese New Year’s cuisine: Aim for the traditional, but not the doctrinal. The beef is just one of nine courses, from all-season fare like tempura and sashimi, to winter specials like chilled soba noodles and broiled fishcake (it’s tastier than it sounds). A vegetarian menu is available with a reservation.
