On a recent Saturday, the six beers on tap at this FoPo hop kiln averaged out to 81 International Bitterness Units. There was nothing listed above 100, and one beer was a stout. Yup, a pretty typical Saturday at N.W.I.P.A. An airy, hardwood-floor storefront, it is a hopheads' embassy in a Portland branching out to sours and Belgians. And it's conscientiously so: A pour of Boneyard's Hop-a-Wheelie IPA was so fresh it actually improved with a day's aging in the growler, almost unheard of. There'll usually be a bonus tap of a cider or dark or sour. A short line of coolers is stuffed with everything from obscure local kombucha brands to $17 bottles of Double Mountain kriek and a few chintzy domestics for the slobs.
